peach cobbler...
















i was trying to figure out what to bake for my first blog. i landed on coconut cake or peach cobbler... naturally everyone wanted cobbler. i was a little afraid that i would totally bomb at making it, but i tried it anyway. thus far, my grandparents, dad and boyfriend have totally enjoyed the cobbler.

good: its super super easy and seems to be quite tasty... i've had no complaints yet
bad: the recipe does not make a very large amount. you could probably only feed 4 or 5, which would be good for a small dinner.

experimentation: my dad bought peach pie filling and also a regular can of peaches. the first cobbler i made, i only used the pie filling. but on the second cobbler, i used 1 can of peach pie filling and added the regular can of peaches too. my dad said he could NOT tell a difference in taste, but the extra peaches helped the cobbler to go a little farther and have more peaches, since pie filling doesn't have that many.

here you go:

1 can of peach pie filling
1/2 tsp of vanilla extract
1 cup of bisquick baking mix
1 tbsp of butter
1 tbsp of sugar
1/4 cup of milk

* 1 can of peaches, if you'd like the extra peaches... it seems to be enjoyed
* you can also sprinkle a little sugar on the bisquick before baking.

-in an ungreased 8x8 baking pan, put your peach pie filling and vanilla extract (*and stir in extra peaches, if you want). place in the oven for about 10 minutes at 375 degrees. (i usually just leave it in there while i make the bisquick and then remove it)

-mix your bisquick, milk, sugar and butter in a small bowl; this is easiest to mix with a fork.

- take your baking pan with the peaches out of the oven. the biquick can be spread over the top of the entire baking pan or you can make little blobs throughout the pan. just make sure to not make any blobs too thick; they may not get done all the way through. (*this is where i lightly sprinkle the bisquick with sugar.)

-bake for 15-20 minutes or until the bisquick is a golden brown.
